Method of preparation :
The ingredients for the dough must be at room temperature. Beat the butter with the mixer, then add the cream and the yolks, which have been rubbed separately with the vanilla sugar, the essences and the orange peel. Gradually add the flour and other ingredients, incorporating them lightly by hand, until a dough is formed which is left to rise in a warm place for about an hour. I hydrated the raisins a little in cognac. Meanwhile, rub the cheese, sour cream and eggs with the mixer until it becomes a creamy composition, then add the rest of the ingredients, mixing lightly with a wooden spoon. Who wants a much finer Easter can give the cheese through a sieve, I prefer it in the first option. Stop a part of the dough (1/3) for the braided string and the rest is spread in a thinner sheet and cover a cake form lined with baking paper. Pour the cheese filling and place the braided string on top. Grease the dough on top with egg yolk. Place in the preheated oven for about 50 minutes. It is ready when the dough on the edges has browned. Cut when completely cooled.

How to make Easter without dough with sweet cheese and raisins
The egg whites are separated from the yolks and whipped. Cheese, sugar, egg yolks, semolina, pudding powder and flavors are mixed in a blender. Dissolve the baking powder in a little lemon juice and add to the composition. At the end, put the raisins and beaten egg whites. Carefully mix the composition, which should have the consistency of a thick cream. Leave it in the oven until it catches a golden crust.

- 600g 000 grade flour
- 1 sachet of dry yeast Dr. Oetker
- 1 sachet of vanilla sugar Dr. Oetker
- 1 sachet of natural vanilla aroma Bourbon Dr. Oetker
- 220ml milk
- 75g butter
- 70g old
- 3 eggs
- 500g fresh cow cheese (you can use urda or ricotta)
- 6 tablespoons sour cream
- 100g old
- 1 vanilla pod Dr. Oetker
- 1/2 sachet Dr. Oetker grated lemon peel
- 1/2 sachet Dr.Oetker brown raisins
- 1 or
1. In a bowl, mix the eggs well with the sugar. Heat the milk together with the butter a little and add it to the egg and sugar composition, then add the Bourbon vanilla flavor. Mix the yeast with the flour and add it to the dough. Knead well until you get a fluffy dough that we cover with a plastic wrap and let it rise for an hour.
2. For the filling, mix all the ingredients, cut the vanilla pod in half and grate it well with a knife.
3. Grease a round baking dish with a diameter of 24 cm with a little fat.
We leave a piece of dough aside (about 200gr.) And spread the rest lightly in a sheet with a thickness of about 1 cm on a board lined with flour.
We put the dough in a round shape then we pour the cheese composition and from the rest of the dough we form a braid with which we decorate the Easter.
Let it rise for another 15 minutes, during which time we preheat the oven to 180 degrees C.
Mix the egg yolk with the milk and grease the Easter egg.
Bake for 40 minutes, then let it cool in the oven with the door ajar.
It is delicious and extremely fragrant :).
