Individual Toffee, Pecan and Peach Crisps


Ingredients

Filling

  • 6 cups frozen sliced peaches (about 2 1/2 pounds), thawed
  • 1 tablespoon fresh lime juice

Topping

  • 3/4 cup all purpose flour
  • 1/3 t cup (packed) golden brown sugar
  • 6 tablespoons (3/4 stick) chilled unsalted butter, cut into pieces
  • 3/4 cup English toffee bits (such as Skor)
  • 1/2 cup pecans, coarsely chopped

Recipe Preparation

Filling

  • Preheat oven to 350°F. Place six 1 1/4-cup ramekins or custard cups on large baking sheet. Mix peaches, sugar and lime juice in large bowl to blend. Divide filling among ramekins.

Topping

  • Whisk flour, brown sugar and salt in large bowl to blend. Using fingertips, rub in butter until mixture holds together in clumps. Stir in toffee and pecans; sprinkle over filling.

  • Bake crisps until filling bubbles and topping is golden brown, about 40 minutes. Cool 10 minutes. Serve warm with ice cream, if desired.

Perfect Peach Crisp

A peach crisp is not to be confused with a peach crumble and certainly not with a peach cobbler. To me, a crisp is in a category of its own. The addition of oats to the topping is what classifies a crisp and it is, hands down, the best part. The oats create a perfectly crispy (get it?) topping that's far beyond addicting. It also gives you a motive to debate its ability to qualify as a hearty breakfast. Chopped pecans or walnuts are also perfectly acceptable here as well.

Can I use frozen peaches?

Totally! Peaches are hard to find outside of summer, especially good, juicy peaches. If you want to use frozen peaches thaw them first, then drain off the excess liquid.

Do I need to peel the peaches?

Nope! We love the texture of the peel on the peach so we don't peel first. If you don't love the peel so much feel free to peel them first!

My Family Loves Peach Cobbler Muffins

One of my fondest memories growing up as a kid was waking up in the morning at our family cottage in Muskoka and smelling freshly baked muffins.

My family’s two favourite recipes were Banana Chocolate Chip Muffins and Lemon Blueberry Muffins. In the summer we’d forage for wild blueberries and incorporate them into out favourite baked goods. My sister was the family blueberry fan while I was mostly obsessed with the marriage of banana and chocolate.

My father grew up in Niagara region, Ontario’s stone fruit capital. I have such fond memories of traveling to Beamsville and Niagara on the Lake in the summer to bite into juicy fresh peaches.

We transformed the classic peach cobbler pie into a muffin by adding freshly chopped peaches into the batter. We also top our Peach Cobbler Muffins with oatmeal streusel and peach jam.

Peach Cobbler Muffins: Mix dry ingredients and wet ingredients in separate bowls before combining.


Pecan Sour Cream Coffee Cake

The following are the ingredients needed to make delicious Pecan Sour Cream Coffee Cake for 8 servings:

  • Crumb:
  • 1 1/2 cups pecans, finely chopped
  • 1/3 cup white sugar
  • 1/3 cup packed light brown sugar
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 3 tablespoons melted butter
  • Cake:
  • 1 7/8 cups all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 cup butter
  • 1 cup white sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 cup sour cream or creme fraiche

Pecan Sour Cream Coffee Cake Cooking Instructions

To cook Pecan Sour Cream Coffee Cake, you need about 25 minutes of preparation time. The time needed to cook this Pecan Sour Cream Coffee Cake is about 30 minutes , and you can serve your Pecan Sour Cream Coffee Cake within 55 minutes . The following are the steps to cook Pecan Sour Cream Coffee Cake easily:

  1. 1 Preheat oven to 350 degrees F (175 degrees C). Butter an 8-inch by 10-inch baking dish.
  2. 2 Mix pecans, 1/3 cup white sugar, brown sugar, cinnamon, salt, and melted butter thoroughly in a mixing bowl until all components are coated with butter, 3 to 4 minutes.
  3. 3 In a separate bowl, whisk together flour, salt, baking powder, and baking soda.
  4. 4 In another bowl, mix together butter and 1 cup sugar with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla and sour cream whisk together. Add flour mixture to wet ingredients whisk until flour disappears (do not over mix).
  5. 5 Spread one half of the batter evenly into the bottom of the prepared baking dish. Scatter one half of the crumb mixture evenly over the top of the batter. Top with the rest of the batter and spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Very gently press crumbs into batter. Bake in preheated oven until a bamboo skewer comes out clean, 30 to 35 minutes. Let cool slightly before serving.

  • Cook's Note:
  • When measuring flour, it's best to gently spoon the flour into your measuring cup. If you dip the cup into the flour it packs the flour and you'll end up with more flour than is called for.
