Put the boiled and cold rice in a bowl (if you have rice left over from another day in the fridge, you can use it anyway). Grate the onion finely and add the boiled peas, diced sausage (I used sausage for cooking, rose or cabanos type), diced red bell pepper, grated cheese, chopped green parsley (I used green coriander). If you want you can also add other ingredients such as canned corn, chopped black olives, etc. Put flour, eggs, salt, pepper over the composition and mix well.

In a frying pan, heat the oil and fry the larger and flat meatballs (flattened type) with a spoon. Remove on an absorbent napkin and then serve with a garnish of your choice (tomato sauce, pot, tzatsiki sauce, etc.).

I made a simple pot of onion seasoned with red bell peppers and sliced ​​tomatoes, all soaked well and seasoned with salt, pepper and spicy sauce. They were delicious that way.

Vegetable stews are delicious and we can cook them in all kinds of combinations. I chose today vegetable stew with rice, a recipe with mushrooms and red beans, in order to offer you a dietetic meal :-), but also rich in fiber, vitamins and even protein.

Ingredients vegetable stew with rice:

2 large onions
2-3 tablespoons of vegetable oil
3 tomatoes
1 bay leaf
5 large mushrooms
4 tablespoons boiled red beans

How to prepare vegetable stew with rice:

Bake eggplant and donuts, clean and finely chop. Peel onions, cut into juliennes, cook in oil. It should not brown, but it should soften well. Then it is shredded in the food processor.

All the ingredients listed above are mixed and boiled, along with the mushrooms cut into large pieces and the beans. Add the peeled and diced tomatoes. Season to taste.
Boil the stew over very low heat for about 30 minutes. It has to decrease and thicken.

Boil the rice in salted water. For half a cup of rice, you need a cup and a half of water. Serve with stew.

100 g of vegetable stew with rice contain: 144 calories, 2.9 g protein, 7 g lipids and 11.2 g carbohydrates.


Rice Meatballs with Vegetables - Recipes

Boil the vegetable soup in a saucepan. Add coriander and ginger. Peel and dice the onions.

Add the onions and rice to the soup, bring to a boil, reduce heat, cover and cook on low heat for 35 minutes.

Meanwhile, wash the apricots, dab until dry, cut in half, remove the seeds and cut them into cubes.

Wash the chives, shake them with water and finely chop, keeping a few berries to decorate.

Uncover the rice and continue cooking until the liquid is completely evaporated. Take it off the heat and cool it briefly.

Mix the egg in the warm rice and season with salt and hot pepper.

Heat 1 tablespoon of oil in a pan and fry the meatballs at a low temperature for 7 minutes on each side.

Divide the avocado in half, remove the seeds and peel it. Divide the lemon in half and squeeze the juice.

Shortly mix the avocado and 2 tablespoons of lemon juice with a hand blender.

Mix the apricots with the chopped chives and season with salt and hot pepper.

Wash the lettuce and shake them with water, break it into small pieces and arrange on a plate.

Mix 1 tablespoon of lemon juice with salt, pepper, a few drops of sweetener and the remaining oil. Pour over salad, add meatballs and garnish with chives. Serve the rice meatballs with avocado sauce.


Spinach meatballs

Spinach meatballs are an easily tolerated preparation in dyslipidemia. Spinach is a vegetable rich in iron, bringing unique benefits to the body. The recipe is enough for 10-12 servings.

Ingredient:

  • 1 packet of frozen spinach, left at room temperature and well drained
  • 2 tablespoons breadcrumbs
  • 1 tablespoon mix of herbs (optional)
  • 50 grams of grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 half teaspoon black pepper
  • 120 grams of melted butter
  • 3 eggs, beaten well

Method of preparation:

Preheat the oven to 170 degrees Celsius. In a large bowl, mix the spinach, spices, Parmesan cheese, breadcrumbs, garlic powder, pepper, melted butter and eggs. Shape the round meatballs into your palms and place them in a baking tray lined with parchment paper. Bake the meatballs for 20 minutes, until browned.

Fluffy meatballs with vegetables and rice

Some vegetables left in the fridge after Christmas, not too many, not a few, all of them little by little, as my mother says. What to do, how to do it, let's turn them into a few fluffy meatballs, only good to be bitten by a mouth always hungry.

Today, after an overhaul of the refrigerator, I took out all the remaining vegetables. I decided to do the dances, some cute and fluffy meatballs with rice. I tried another time to make meatballs with rice and they were really tasted and appreciated by the young lady, so I knew I was safe.

ingredients:

  • 100 gr champinion mushrooms
  • 1/2 onion
  • 1/3 carrot
  • 1/3 red bell pepper
  • a few bunches of broccoli
  • 1 small clove of garlic
  • 2 quail eggs
  • 30 gr cheddar
  • 2 lg of rice
  • 1 tablespoon olive oil

How I proceeded:

  • I put the vegetables in a chopper and chopped them, I chopped the mushrooms with a knife
  • I washed the rice well and put it to boil, and I smothered the vegetables in the pan until all the liquid drops
  • I let the vegetables cool for about 10 ', during which time I rinsed the rice, mixed it with olive oil, beaten eggs and grated cheddar
  • after cooling, I added the vegetables and mixed
  • with lightly floured hands, I formed the meatballs that I placed nicely in the prepared tray, after which I invited them in the preheated oven at 190 degrees, for 30 '

I served the meatballs next to a radish salad.

The best fasting meatballs - with mushrooms and vegetables

See how you can prepare some fasting meatballs, with mushrooms, very tasty and suitable for meals during the fasting period. It is a healthy recipe but also economical.

Ingredient:

  • 1 kg Champignon mushrooms
  • 2 medium potatoes, 1 carrot
  • 4 cloves garlic, green parsley, dill
  • Salt, 4 tablespoons breadcrumbs, oil, pepper

I used canned mushrooms but you can use any other mushroom (eg mushrooms) but they must be cooked to make the meatballs softer.

Method of preparation:

  1. First we have to boil the potatoes in their skins - when they are cooked, they are passed under a stream of cold water and peeled. Pass and make a puree.
  2. Mushrooms are given through a meat machine or blender, as well as finely chopped vegetables, parsley and dill, salt and pepper - mix and add the breadcrumbs - if it is a wetter composition, add 1 tablespoon of breadcrumbs
  3. Mix well and refrigerate for 20 minutes
  4. Heat a frying pan with oil and form the meatballs (round or flat) - fry on both sides and leave to cool on an absorbent napkin

They can be served with puree, polenta or pickles. Good appetite!
